The wine finished primary and secondary fermentations the following Spring, and we bottled the wine (unfined and unfiltered, of course!) and stashed the bottles away for aging. And now, it’s time to drink them!
Showing a deep, healthy sockeye salmon color, the wine has lifted raspberry, strawberry and watermelon aromas. It is medium bodied, and the berry flavors continue onto the palate. It ends with a distinct mineral note, and a long, lingering finish. Really delicious and capable of matching so many foods of the coming springtime.
